The first time I heard of Diet Coke chicken, I wasn’t impressed by the sound of it. I’m pretty sure my reaction involved scrunching up my nose and sticking out my tongue.
But, after hearing other members of my Slimming World group go on about how delicious it is, I decided to give it a try.
Since then, the meal has become a favourite in our house. Even when I took a break from the plan, I prepared this meal on a regular basis. After all, it’s simple to make, tastes delicious and it’s syn-free.
Plus, Pumpkin and Daddy-man like it as well.
One of the beauties of Diet Coke chicken is that you can add or change various ingredients to make it something that you and your family really enjoy.
For example, in the past, I’ve swapped the chicken out for pork and I’ve also played around with the sodas and spices used.
I usually use Chinese five-spice, but barbecue seasoning also works really well. Another favourite variant is Fanta Zero with Thai seven-spice and a bit of orange squash for a lovely orange chicken.
While most people who make Diet Coke chicken use the recipe on the Slimming World website, I’ve simplified the recipe and made some improvements.
I start by cutting chicken thighs into bite-size pieces and frying them.
Once the chicken has browned, pour in a can of Diet Coke, Chinese five-spice, Worcestershire sauce, balsamic vinegar and soy sauce.
I also usually add in a small amount of chilli sauce.
Mix it all together, and leave the mixture to simmer.
Let it cook for a while.
Eventually, usually after about 20 minutes, the liquid will all cook away and you’ll be left with chicken covered in a thick, sticky sauce.
I usually serve the Diet Coke chicken with rice and fresh pineapple chunks.
The rice I use is the Uncle Ben’s Basmati. It takes a couple of minutes to cook in the microwave and is delicious. The pack is two syns and I think worth it. Daddy-man prefers the Egg-Fried Rice variety – it has a higher syn value.
This time I couldn’t get pineapple chunks, so I opted for roasted peppers and green beans instead.
Ingredients
- Fry Light
- 1 packet of chicken thighs (6-8 thighs), cut into bite-size pieces
- 1 can of Diet Coke
- 1 tablespoon Worcestershire sauce
- 1 tablespoon soy sauce
- 2 tablespoons balsamic vinegar
- 1 teaspoon Chinese five-spice
- Chilli sauce (these sometimes have a very small syn value, so be sure to check)

Method
- On high heat, brown the chicken.
- Add Diet Coke, Worcestershire sauce, soy sauce, balsamic vinegar, five-spice and chilli sauce and stir.
- Bring the mixture to the boil, then turn down the heat and allow it to simmer until the sauce becomes thick and slightly sticky. This can usually takes about half an hour.
- Serve with rice, fresh pineapple or your choice of vegetables.
