I’ve never been a huge fan of fast-food fried chicken. I think that it’s a bit too greasy.
Well, except when I was pregnant. Then I ate the stuff for a week straight because it was the only thing that didn’t make me want to hurl.
But, Daddy-man is a big fan of the Colonel’s chicken, and when he brings it home, it’s hard for me not to at least steal a few of his fries.
So, when the Slimming World Fakeaways book came out, I was happy to try their recipe for spiced chicken.
I was even happier when I ate the results. I actually think this is better than anything you can get from a fast-food restaurant and the only syns are for the breadcrumbs, which you could use as a HexB.
Plus, it’s pretty simple to make too!
I’ve made a few changes to the original recipe, which can be found in the Fakeaways book.
Here’s what you’ll need: chicken: tomato puree, some wholewheat bread, 1-2 eggs, mixed herbs, cayenne pepper, garlic salt and black pepper.
Start by putting the bread, herbs and spices in the food processor.
Blitz it all together until you have a nice fine powder.
Then, separate your egg – I always start with one and then feel like I don’t have enough so add another.
Add your tomato puree to the egg yolk.
Whisk the egg and mix the yolk/tomato mixture together.
Keep going with the whites until you get soft peaks.
Then, it’s time to set up a little manufacturing station.
- Chicken thigh fillets
- Egg whites and yolk mixtures folded together
- Bread crumbs
- Baking tray with non-stick paper.
Dunk each piece of chicken first into the egg mixture, then into the bread crumbs. Then, place it on the baking tray.
Once all of the chicken has been dipped, I sprinkle any remaining bread crumbs on pieces that could use a little more.
Finally, give it all a good spray of FryLight, then pop it in the oven.
Bake for about half an hour, but keep an eye on it, as the bits of bread will quickly start to go dark.
Don’t forget to serve it up with the sides you’d normally get from the fast-food chain. I use the Heinz BBQ baked beans, sweetcorn and salad. I usually do Slimming World chips too, but boiled new potatoes are good.

- 60g wholemeal bread
- 2 tsp cayenne pepper
- 2 tsp garlic salt
- 1 tbsp dried mixed herbs
- Black pepper to taste
- 150g tomato puree
- 1-2 eggs
- 1 pack of chicken thighs (usually 8-10 in a pack)

Method
- Pre-heat the oven to 220 degrees C.
- Put bread, herbs and spices in the food processor and blitz until fine.
- Separate the eggs. Whisk the whites until they form soft peaks.
- Mix yolks with tomato puree. Then fold the two egg mixtures together.
- Line a baking tray with non-stick paper and set up your manufacturing station.
- Dip each piece of chicken first in the egg mixture, then in the bread crumbs. Finally, place on the baking sheet.
- Give the coated chicken a spray of FryLight, and place in the oven for 25-30 minutes.
- Serve with sides like baked beans, sweet corn and Slimming World chips for a family feast!
